Ahhh, summer. As far as I'm concerned there is no better time for fresh flavor in the kitchen! The stores are full with an abundance of fresh fruits, veggies, and herbs. Now lets combine some of those fresh flavors to create a truly amazing sandwich!!!
Two slices of 100% whole wheat bread
Swiss cheese or provolone
Evenly spread a thin layer of light mayonnaise onto each slice of bread. (Easy with the mayo to keep the fat down.) Grind on fresh black pepper to taste. Thinly slice red onion and put one layer of onion on each slice.
Stack on the sliced turkey, as much as you like. Roughly chop a small bunch of pre-washed cilantro. Sprinkle cilantro on the top of the turkey.
Pit, scoop and slice the avocado (1/4 inch thick). (Avocados contain oleic acid, a monounsaturated fat that may help to lower cholesterol. ) Place the avocado slices on top of the turkey. Place a layer of either Swiss or Provolone cheese on top of each open faced sandwich.
Finally, place both sandwiches in a toaster oven until the toast is golden brown and the cheese begins to bubble. Sit down and enjoy. My favorite part is the fresh flavor of the avocado and cilantro. You get great flavor without extra salt!
